Need to whip up a quick brunch but want it to feel a little fancy? Look no further!
This quiche can even be made ahead of time and then reheated throughout the week for a quick, delicious, and nutritious breakfast. It's really an all-round go to recipe in our house.
What you'll need:
1-9" pie crust
3 strips cooked bacon or 1/2 cup smoked pork
1 small onion, thinly sliced
1/2 cup veggies of choice (Here I used bell pepper and zucchini)
1/2 cup cheddar cheese
1/4 cup parmesan cheese
1 cup milk &/or cream
1/4 tsp nutmeg
1/4 tsp pepper
1/2 tsp salt
What you'll do
Bake the crust @ 400 degrees for 10 minutes (line the bottom with dry beans to prevent bubbles)
Sauté onion and veggies until golden and onion starts turning transparent
Combine eggs, cream, and spices
Grate cheese and crumble bacon and add to egg mixture
When the shell is done remove the beans, place on a cookie sheet, and fill
Bake @ 375 for about 30 minutes or until a toothpick comes out clean
