Chicken Cacciatore with Potatoes
Who wouldn't want a big bowl of homegrown goodness to warm the belly right about now?

The perfect cure for winter blahs; chicken cacciatore with potatoes to make it extra hearty! Better yet, you can throw it all in a slow cooker in the morning for a no fuss meal at the end of the day!

Ingredients:
4-6 Middle Farm chicken thighs or drumsticks
2 lb potatoes, cubed
2-3 large carrots, sliced
2 sweet peppers (red, green, yellow, or orange), diced
3 cloves garlic, crushed
1 medium onion, roughly chopped
1 can crushed tomatoes
1 can tomato sauce
1/2 jar tomato paste
1.5 cups broth or red wine
2 tsp of an italian spice mix
salt, pepper, red pepper flakes to taste
1 cup mushrooms (add these in the last 30 mins of cooking)
Prep:
Arrange the potatoes on the bottom, then chicken, then everything else.
Cook on high for 4 hours or low for 8.
Serve on a bed of rice, pasta, spaghetti squash, or with a fresh loaf of bread.
Notes:
We served ours with a salad too. It might be January but we're still eating kale straight from the garden!
